Kaili residents just cannot live without sour food! In Kaili, the capital of Qiandongnan Miao and Dong Autonomous Prefecture in SW China's Guizhou Province, Shaguofen (sour broth rice noodles boiled in the special earthenware pot; shaguo means the earthenware pot) is always the preference for the locals.

“三天不吃酸,走路打蹿蹿”,这是凯里人的口头禅,由此可见凯里人对酸的偏爱。在凯里,无论是早中晚餐,砂锅粉永远是主角。

The red sour soup serves as the base, and more ingredients including the rice noodles, meatballs, pig's liver, ham sausage, and cabbage are added into the earthenware pot and boiled to make Shaguofen. Then, you can make a DIY chili sauce with some baked green pepper sauce, some fish mint, some coriander, and Litsea pungens' oil.

鲜红色的酸汤打底,配上雪白米粉、肉圆子、猪肝、火腿肠、莲花白一起在砂锅里煮,打上一碗辣椒蘸水,里面加入一勺烧青辣椒、一勺折耳根、一小把香菜、几滴木姜子油,一碗鲜酸爽口的凯里砂锅粉就大功告成了。

The way to enjoy Shaguofen is unique. You need to ladle some rice noodles out of the pot into the chili sauce bowl; make sure every rice noodle is wrapped with the chili sauce before eating them as the chili sauce just builds the flavor up.
